Study notes
Salivary amylase in your mouth breaks starch into maltose — you can taste this by chewing plain rice or bread for a minute: it slowly turns sweet as the enzyme works. Pepsin in the stomach digests proteins, and DNA polymerase copies DNA during cell division.
