Fermentation: alcoholic and lactic acid
Cellular respiration overview · Biology
Study notes
Idli-dosa batter rises because wild yeast ferments sugars into CO2 and traces of ethanol — the sour tang is lactic acid from bacteria fermenting alongside. Brewers exploit alcoholic fermentation at industrial scale: barley sugars become beer (~5% alcohol), grape juice becomes wine (~12%), and distillation concentrates it into spirits.
