When you sprint 100 metres, your muscles burn glucose through glycolysis faster than oxygen can arrive — pyruvate becomes lactate, and the burning sensation plus next-day soreness are the price. Yeast does the same trick in breweries: glycolysis followed by alcoholic fermentation turns sugar into beer and wine.
